Feeding program menus
Principles
Our feeding program’s menus are carefully considered.
We consider:
the fact that likely it will be the detainee’s most substantial meal of the day
the local population’s health tendencies
the fact that detainees move less and have less access to sunlight than free citizens
We aim for low fat, medium carbohydrate and high protein:
low fat: <3g of saturated fat and <30% of calories, and ideally <10g of total fat
medium carbohydrate: ideally 45-65% of calories
high protein: >25g of protein, and ideally >25% of calories.
We aim for less than P50 per portion (pp) excluding rice, which is often donated.
We are careful about allergens.
And we always cook fresh and serve hot.
